Food Safety Supervision Skill Set
The SITSS00069 – Food Safety Supervision Skill Set is designed for supervisors, team leaders, and staff responsible for overseeing food safety practices in a variety of food-handling environments, including hospitality, retail, and commercial kitchens. The course provides learners with the knowledge and practical skills needed to ensure food is handled safely at all stages, from delivery and storage to preparation, cooking, service, cleaning, and waste management.
This skill set is made up of two nationally recognised units:
1. SITXFSA005 – Use Hygienic Practices for Food Safety
Focuses on personal hygiene, cleaning and sanitising, controlling contamination, and following workplace procedures. Learners will develop skills to maintain hygienic food-handling practices and monitor compliance with food safety standards.
2. SITXFSA006 – Participate in Safe Food Handling Practices
Covers safe food handling from delivery to service, including receiving, storage, labelling, FIFO practices, cooking, reheating, holding, and serving food safely. Learners will also practice monitoring food temperatures, preventing contamination, and applying corrective actions when necessary.
Learners gain an understanding of food safety responsibilities, legal requirements, and workplace policies. The course teaches supervisors how to prevent contamination, monitor staff practices, report hazards or incidents, and implement corrective actions to maintain a safe food-handling environment.
Upon successful completion, learners receive a Statement of Attainment for SITSS00069 – Food Safety Supervision Skill Set, demonstrating their competency in supervising food safety operations and ensuring compliance with legal and workplace food safety requirements.
